A less expensive version; probably does not taste as good. The nutritional info for the soy flour comes from the package first, then for nutrients not on the package I used the USDA SR-27 database entry "Soy flour, low fat". For the masa, I used the package first, then the USDA SR-27 database entry "Corn flour, masa, unenriched, white". The nutritional info in all cases was very close to what was on the package (except for calcium in the Masa flour; but the calcium level is dependent on how much calcium was used in the nixtamalization process; so the entry on the package should be more accurate).
The value for sulfur in the soy protein is the mass of sulfur amino acids; results obtained from this study: http://dx.doi.org/10.1111/1750-3841.12553
