Mix oil, eggs and milk together.
In seperate bowl, mix remaining (dry) ingredients. Form well in center of dry ingredients, pour in liquids. Stir just until mixed. Do not overmix!
Divide into 6, cook in jumbo muffin tin.
325F for 22-25 minutes.
Pretty good. Slightly dry, but I'm not sure that can be helped without boosting fat up a bunch. Substitute as much wheat flour with banana flour as you like, adds to banana taste and cost.
