A diabetic-suitable, nutritionally complete waffle recipe.

The sugar and salted butter are standins for common waffle toppings.

To prepare, grind all dry ingredients to a powder then mix them together. Mix all wet ingredients together in a separate bowl, reserving some of the oil to coat your waffle iron. Combine the wet and dry ingredients, mix roughly, then spoon into waffle iron. Waffles are done when the waffle iron says so, or when steaming slows to nearly non-existent.

The batter gets thicker as it sits together with water, which can affect cooking time of waffles later in the cooking cycle.
