- The 1st attempt at the cookies yielded a batch that was fairly dry & stodgy;
- The level of spice was good, and the ginger pieces are delish;
- Could've been sweeter, so I doubled the stevia leaf powder from 1g –> 2g, and the molasses from 10g –> 20g;
- I think that my zeal to make the recipe nutritionally complete is unfounded; when tracking nutrient-intake, it's not necessary to have every thing balanced in & of itself.

Mike Mahler's Vanilla Almond Protein Cookies
Ingredients
- 64g worth of protein powder
- 3 Tbsp almond butter
- 3 Tbsp milled chia
- 1 Tbsp maca
- 1/4 cup nuts
- 2 Tbsp allspice OR pumpkin pie spice
- 1 tsp stevia liquid
- 1.5 cups water
Method
- Mix everything in a bowl with a spoon until a thick paste forms;
- Pre-heat oven to 220˚C;
- Place mixture on cookie sheets;
- Bake for 15 minutes.
